I need the recipe for Watermelon Rind Preserves?
My grandmother prepared these when I was a kid back in the 70s they were delicious. They were family all dead now, Can You help?
Watermelon rindpreserves INGREDIENTS: 4 pounds watermelon rind chopped 1 gallon of water 1 / 2 cup salt 9 cups sugar white 8 cups water 4 teaspoons cinnamon 4 teaspoons crushed clove 4 lemons – rinsed, sliced and seeded 1 ounce red food coloring (optional) —————- ——————————- ——————————— INSTRUCTIONS: Peel the green skin of the watermelon and cut into 2 inch . Soak the bark in a solution of 1 gallon of water and 1 / 2 cup salt overnight. Remove the crust of salt water and place in a pot with fresh water to cover. Bring to a boil over medium-high heat, and cook for about 30 minutes, or until the peel is tender. Drain. In a large saucepan, combine sugar, 8 cups of water and sliced lemons.
